Serves 4

Ingredients


  • 500g ripe plum tomatoes
  • 1 medium onion
  • 1 garlic clove
  • 1tsp olive oil
  • 3 vegetable stock mixed with 1/2 litre water
  • ½ small shape pasta boiled
  • Black paper
  • Fresh coriander/ parsley few leaves for garnish

Method


Ø Place the onion into the pan , cook untill tender then add garlic, cooked or 2, e minutes then tomatoes into the pan and cook over a low heat for 15 minutes, stirring the occasionally, until very soft
Ø then add vegetable stock, Spoon the vegetables into the food processor or blend with blender. Them return to the pan
Ø And bring to the boil add the boiled pasta and simmer gently 4– 5 minutes
Ø Add black pepper for taste, sprinkle coriander or parsley for garnish/ or use 1 tsp fresh cream for garnish
Ø Serve hot
