Kuwaiti Biryani By Zubaida Tariq
Ingredients:
Chicken Boneless 1 kg
Rice 2 – 2 ½ cup
Yogurt 1 cup
Tomato puree 1 cup
Lemons 4
Ginger garlic 1 tbsp
All spice powder 1 tsp
Red chili powder 1 tbsp
Turmeric Powder 1 tsp
Green chilies 8
Salt to taste
Mint leaves 1 bunch
Yellow food color as required
Fresh milk ½ cup
All spices as required
Clarified butter 1 cup
Onion (chopped) 3
Method:
Take 1 cup clarified butter and heat it. Sauté 3 chopped onions till they are golden brown. Take it out and keep it on the tissue paper to dry. Add in 1 kg chicken, 1 tbsp ginger garlic, salt and 1 tsp turmeric powder in the remaining fried onion. When the water of the chicken dries add in 1 cup tomato puree, 1 tbsp red chili powder, 1tsp All spice powder, chopped green chilies, 2 lemon juice and 1 cup yogurt. Now boil the rice along with some salt, chopped mint leaves, 2-3 green chilies and some all spice powder. Drain the water once boiled. Grease the pan and layer the rice in it. then layer the chicken on it and put some mint leaves. Layer the rest of the rice and put green coriander and mint leaves also add some yellow food color or saffron on it. In the end sprinkle lemon juice and simmer. Dish it out and serve.
