INGREDIENTS:
1 kg bengan (ek degchi men 1 tbsp oil daal kar steam kar leyn jab usski skin jali jali hojaye to hata deyn..pher benganon ko peel kar leyn aur uska gooda nikal leyn..agar ap sath men thori si skin bhi daal deyn ge to acha taste aaye gaa)
2 pyaz
salt to taste
1 tsp sufaid zeera
2 tsp kuti hui laal mirch
3 tomatoes
hari mirchen
dhaniya
podina
PROCEDURE:
pyaz ko gulabi mail kar leyn pher uss men timatar daal len then sufaid zeera 1 tsp, namak 1 tsp, lal mirchi kuti hui 2 tsp daal kar bhoonen. masala bhun jaye to bengan ka gooda with some skin dal deyn aur bhoon leyn.Pher dhak deyn thori der.jab bhun jaye to her hari mirchen(lambai k rukh par kati hui) aur podina daal kar dam pe rakh deyn for few seconds taak podiney ki khusbu aajye..dish out karleyn aur dhaniya aur hari mirchon se garnish kar leyn.
