INGREDIENTS
1kg mutton
2 onions
1tomato chopped
2tbsp ginger paste
2tbsp garlic paste
4tsp red chili powder
1/4 tsp turmeric
3tsp coriander powder
1tbsp almond powder
1tsp poppy seeds
1/2 cup refined oil
1 cup yogurt
whole garam masala(1''cinnamon,5green cardamom,1 black
cardamom,5cloves,2bayleaves,5 peppercorn
METHOD
grind poppy seeds and almond and mix with onion paste,ginger,garlic,and all dry masalas.
heat oil in a pan add whole garam masala when they crackles,
add wet masala paste and fry it,then add yogurt and salt
add mutton stir well close the pot
cook it medium to low heat, let it cook in its water.add more water if required.
when meat gets tender open the lid and bhonu until oil starts separating from masala..
add some hot water for the gravy.
adjust the seasoning
garnish with almonds and chopped coriander.
serve with nan,roti or boiled rice.

Mutton Pulao Biryani
Ingredients
Mutton 1/2 kg
Rice 1/2 kg (soak rice for 30 mins)
Onion 4tbsp (fried)
Ginger paste 2tbsp
Garlic paste 2tbsp
Yougurt 2tbsp (whiped)
Oil 1/3 cup
Rose water or Kewarrah 1 tsp
Saffron few drops
Salt to taste
Whole All Spice:
Black cumin seeds 1 tsp
Bay Leaf 1
Cinamon Stick 1 piece
Black Pepper 10
Cooking Directions
1. Boil the mutton in a large pan, with added 8 glass of water, salt, ginger paste and garlic paste.
2. When mutton is half done and water becomes 4 glass turn off the flame.
3. In other pan add oil when oil is heated add ginger paste, garlic paste, whole all spice, salt, whipped yogurt and fry onions fry all ingredients untill light brown.
4. Add rice without water and also fried rice with spice after that add mutton soak and cook in a high flame for 5 minutes.
5. After that when pulao is half cooked low flame until rice is completely cooked.
6. Served it with raita.

Salty Mutton Bites (Mutton Namkeen Boti)
Ingredients:-
Mutton pieces ½ kg
Oil 4 tbsp
Ginger garlic paste 2 tbsp
Curd 250 gram
Salt to taste
Crushed cumin seed 1 tbsp
Crushed dry coriander 1 tbsp
Whole spice as required (whole)
Khatai (sour) powder 1 tbsp
Crushed black pepper 1 tbsp
Water 1 ½ glass
Green chili 4
Cooking Directions:-
In a pan saute ginger garlic paste and then add mutton and cook till its water get dry.
Then add curd and salt in it.
Cover the pan and let it cook.
When meat is tender, add Crushed cumin seed, Whole spice, Crushed dry coriander, Khatai (sour) powder, Crushed black pepper, water and green chili.
Cook until water dried.
When ready, dish out, garnish with ginger and coriander.
Serve hot with naan or chapatti.

Ingredients: • 1/2 kg Mutton Chops
• 200 gms Tomatoes (chopped)
• 75 gms Ginger
• 2 tsp Coriander Powder
• 1/2 cup Coriander Leaves (chopped)

How to make Mutton Chops: •Put muttonchops, chillies, tomato, coriander leaves and salt in a pressure cooker. •Cook for about 5 minutes. •Add oil or ghee and again fry for 10 minutes. •Mix all the spices, red chilly powder, garam masala, nutmeg and coriander powder in curd. •Beat the mixture properly. •Add this to the chops and seethe for about 3 minutes. •Keep in a pressure cooker and cook for about 3 to 5 minutes. •Muttonchops are ready. •Serve it garnished with a few coriander leaves.

Ingredients: Mutton - 1 kg
All purpose flour (Maida) - 2 tablespoons dissolved in 1/4 cup of water
Turmeric powder - 1/2 teaspoon
Cinnamon stick - 1
Bay leaves - 2
Cardamom - 2
Cloves - 8
Garam masala - 2 tablespoons
Ginger garlic paste - 2 tablespoons

Coriander powder - 1 tsp
Yogurt - 3 tablespoons

Nutmeg - Few pinches

How to make Mutton Nihari
Clean the mutton and cut into medium pieces. Heat oil in a pan and add bay leaves, cloves, cinnamon stick and ginger garlic paste. Add the mutton and fry for 2 to 3 minutes. Now add red chilli powder, coriander powder, turmeric powder, yogurt, garam masala and fry until the oil separates. Add the nutmeg, cardamom, spice masala and 3 cups of water and cook on low heat for 3 to 4 hours. Finally, add the flour and cook for about 10 minutes. Garnish with coriander leaves, ginger, onions and green chillies. You can serve mutton nihari with chappati, naan or rice. Mutton Nihari is a delicious pakistani dish served to please guests.

Vegetable Mutton curry
Ingredients and quantity
Mutton – 500 grams
Patota – 250 grams
Green pea – 200 grams
Carrots – 2 whole
Cauliflower – Half
Onion big – 2 whole
Garlic – 6 seeds
Ginger paste – 1 tea spoon
Chili powder - 0.5 tea spoon
Turmeric Powder – 0.5 tea spoon
Masala - As required
Sour Yogurt – 50 grams
Oil and Salt - As required
Sugar – 4 Tea spoon
Green Chili, sliced - 4 whole
Procedure:
Wash potato, tomato, cauliflower and carrots and chop these into small pieces. Marinate the mutton mixing with sour yogurt, onion and sliced garlic. Give a pan on the oven and give cardamom, cinnamon, cassia leaves, onion and garlic and fry for some times. When its smells good, add all other ingredient and the mutton into the pan and braise for some times. Add water and cook more. When the mutton is tender add sliced green chili and braise at low heat. Add all the vegetables and salt and cook for another few minutes. When the entire material is tender and smells good place the entire into a bowl add coriander leaves and serve.

Asafoetida : 1 1/4 teaspoons
Cinnamon : 2 one-inch sticks
Cloves : 6-8
Ratanjot : 4-6 inch piece
Black peppercorns : 5-6
Black cardamoms : 4
Admix Addegi mirch powder : 1 tablespoon
Fennel seed (saunf) powder :l 2 teaspoons
Admix ginger powder : 1 tablespoon
Admix Coriander powder : 1 tablespoon
Salt to taste
Yogurt, whisked : 1 cup
Admix meat masala 2 tablespoonMETHOD :
Heat oil in a thick-bottomed pan. Add asafoetida, cinnamon, cloves, black peppercorns and black cardamoms. Sauté till fragrant. Add mutton pieces and cook on medium heat, stirring constantly till mutton pieces turn a nice reddish brown colour. This may take twelve to fifteen minutes. Sprinkle a little water and continue cooking for twelve to fifteen minutes more on low heat. Make sure to stir constantly and scrape all the sediments from the bottom of the pan. Add Admix Addegi mirch powder, fennel powder, Admix ginger powder, Admix coriander powder, Admix meat masala and salt. Add yogurt and two cups of water. Cook, covered, till mutton is tender, stirring occasionally. Serve hot.
