Char-grilled vegetable salad
Ing:
500g baby red potatoes, washed, halved
500g sweet potato, peeled, cut into 4cm pieces...
2 tablespoons Olive Oil
1 large (185g) red capsicum, thickly sliced
1 large (180g) red onion, cut into thick wedges
120 g Haloumi OR Paneer, cut in 12 slices
1/4 cup toasted pine nuts
80g mix salad leaves
Dressing
1 teaspoon dijon mustard
1 clove garlic, crushed
1 teaspoon sugar
1 tablespoon red wine vinegar
salt and pepper
2 tablespoons olive oil
Method:
Step 1
Preheat oven to 220°C/200°C fan-forced. Place potato, sweet potato and oil in a bowl. Toss well to combine.
Place mixture, in a single layer, onto a large oven tray. Season with salt and pepper. Roast for 20 minutes.
Step 2
Brush red capsicum, red onion wedges, haloumi and lemon wedges with oil and grill it on both sides & until softened with light grill marks.
Cut red capsicum into bite size pieces.
Step 3
Meanwhile make dressing. To make dressing whisk mustard, garlic, sugar, green corriander, lemon juice and vinegar together in a small bowl.
Season with salt and pepper, gradually whisk in oil until well emulsified.
Step 4
Place grilled and roasted vegetables, salad leaves and pine nuts in a large bowl.
Pour dressing before serving. Toss gently to combine. And serve.
