Marble Cake
Preparation time :30 minutes
Cooking time :35 minutes
Total time :1 hour 5 minutes
Serves: 8
Ingredients
100g self-raising flour
½ tsp baking powder
40g plain chocolate, broken into pieces
125g caster sugar
2 medium eggs
1–2 tbsp milk
30g ground almonds
125g unsalted butter
For the icing
60g plain chocolate, broken into pieces
30g unsalted butter
1 tbsp double cream
Method
- Preheat the oven to 180°C, gas mark 4. Sift the flour with the baking powder and a pinch of salt. Grease a 19cm x 8cm x 6cm (454g) loaf tin and line the base. Melt the chocolate over a pan of gently simmering water, or in the microwave.
- Cream the butter and the sugar until light and fluffy. Beat in the first egg, then half the flour and 1 tbsp milk. Repeat, then fold in the ground almonds and enough milk to give a thick dropping consistency.
- Put half the batter in a separate bowl and stir in the melted chocolate. Now drop alternating spoonfuls of the two mixtures into the tin. Draw a sharp knife through the duo of mixes, swirling them into marbled patterns. Bake for 35–40 minutes until firm to the touch. Test by plunging a skewer into the centre – if it comes out clean, it's ready. Let the cake sit in its tin for 5 minutes, then turn out onto a rack to finish cooling.
- To make the icing, melt the plain chocolate with the butter and cream in a pan over simmering water, or in the microwave. Stir together, then leave to cool until it begins to thicken. Spoon over the cake and spread out smoothly, allowing the excess to trickle seductively down the sides.

• 1 Package(2-layer size) white cake mix
• 1 Package (3 ounces) strawberry-flavored gelatin powder
• 4 Eggs, lightly beaten
• 1 Cup vegetable oil
• 3/4 Cup mashed strawberries
• Strawberry Icing
• 1/2 Cup butter
• 1 Pound confectioners' sugar
• 1/4 Cup water
How to make Strawberry Cake:
•Take the cake mix and gelatin powder in a big bowl.
•Beat in oil, eggs, water and strawberries.
•Pour the mixture into greased and floured cake pans.
•Bake it for 30 minutes at 350 F.
•Stop baking when a toothpick inserted comes out clean.
•Beat the butter and confectioner’s sugar together for icing.
•Spread Strawberries between cake layers and frost top and sides.
•Cool and frost with Strawberry icing.
•Strawberry Cake is ready.

Ingredients
1 cup powdered milk
1 egg
1 tsp. oil
1 tsp. baking powder
Syrup:
1 liter milk
6 tbs. sugar
1 green cardamom (Chhoti Ilaichi)
1 tbs. chopped pistachio (Pistay)
1/2 tsp. Kewra essence
Instructions
Mix together the ingredients into a dough and form into small oval, slightly flattened balls. Meanwhile boil the milk with sugar and ilaichi seeds. When the milk starts to boil add the malai balls. When they start to swell up lower the heat and cook for 10 minutes. Just before removing from heat add kewra essence. Garnish with pista.
Chill and serve.
Serving: 24 pcs. for 8 to 10 persons

• 2 Eggplants
• 1 Large onion (chopped)
• 1 Large tomato (chopped)
• 5 Garlic flakes
• Chopped green chillies
• 1/2 Cup oil
• Fresh coriander leaves
How to make Baingan Ka Bharta:
•Roast the eggplants till it turns soft.
•Peel off the skin and mash it properly.
•Add mustard oil, green chillies, onions, tomatoes and chopped garlic.
•Add salt and mix it well.
•Pour a tsp of lime juice over this mixture.
•Serve Baingan Ka Bartha with rice.
