1 ¼ cups plain natural yogurt
2 tsp. salt
2 tsp. sugar
1 tsp. lemon juice
½ cup cucumber, skinned and finely chopped or coarsely grated
2 medium tomatoes, diced
4 green onions, diced
fresh cilantro for garnish (optional)

In a bowl, mix together the yogurt, salt, sugar and lemon juice
Add the cucumber, tomato, and onions. Mix well
cover and refrigerate for at least 10 minutes before serving
Keeps for up to two days in the refrigerator
Serve as a side dish.
