    Beef Tikka Recipe

    Ingredients:

    1 kg. cubes of beef
    2 tbs. unripe papaya(ground)
    tsp. ginger (Adrak) paste
    tsp. garlic (Lehsan) paste
    2 tbs. yogurt
    1 tsp. chili (Lal Mirch) powder OR 1 tbs. chopped green chilies.
    Instructions

    Mix together all the spices, yogurt and papaya and coat the beef cubes with it.
    Leave to marinate for 5-6 hours preferably overnight.
    Barbeque over charcoal.
    Serve with mint chutney, yogurt and onion rings and naan

    Serving: 2 to 3 persons

    Jalapeno Steak

    Ingredients


    • 4 jalapeno peppers, stemmed
    • 4 cloves garlic, peeled
    • 1 1/2 teaspoons cracked black pepper
    • 1 tablespoon coarse salt
    • 1/4 cup lime juice
    • 1 tablespoon dried oregano
    • 1 1/2 pounds top sirloin steak


    Directions


    1. Combine jalapenos, garlic, pepper, salt, lime juice and oregano in a blender. Blend until smooth.
    2. Place steak in a shallow pan or large resealable plastic bag. Pour jalapeno marinade over the steak, and turn to coat. Cover pan or seal bag; marinate in the refrigerator 8 hours or overnight.
    3. Preheat an outdoor grill for high heat, and lightly oil the grill grate.
    4. Drain and discard marinade. Grill steak 5 minutes per side, or to desired doneness.

    Hunter beef

    Ingredients:

    2 kg Beef "Roast cut" bread shape one piece.
    2 tsp. Crystallized salt petre "Kulmi shora"
    3 tsp. Black pepper
    2" stick of Cinnamon
    2 tsp. brown sugar
    4 Black Cardamom
    3 tbs. Lemon juice

    Method:

    Wash the meat thoroughly and dry with kitchen towel.
    Ground all the spices.
    Add all spices in the lemon juice to make paste.
    Rub the paste thoroughly on the meat.
    Place it in a glass or stainless steel container and cover it.
    Place the bowl in the fridge for one day.
    Next day get the meat out of fridge and sort of massage the meat to absorb the paste, it is important that at least half an hour is spent in rubbing the meat.
    Once again put the meat loaf back in the fridge.
    Repeat the same process each day for six days.
    On Sixth day remove the meat loaf from the fridge and tie it with a strong string.
    Place the meat in a large pot and put 2 cups water in the pot NOT on the meat loaf.
    Cook it over low heat for 2 to 3 hours or until the water is absorbed.
    Hunter Beef is a very popular snack from Pakistan. We have it in the cold winter evenings with Kashmir tea or coffee. Some people like to fry stripes of hunter beef and then serve with tea or coffee. Left over can be kept in the fridge for few days and can also be stored in freezer for longer period of storage.

    Family Style Beef Pizza

    Prep Time: 20 minutes
    Yield: Makes 6 servings

    Ingredients:
    1package (13.8 ounces) refrigerated pizza dough

    1/4pound 95% lean ground beef

    3tablespoons finely chopped onion

    3/4cup pizza sauce

    1small tomato, peeled, seeded, and chopped

    2teaspoons dried Italian seasoning

    2cloves garlic, minced

    1/8teaspoon ground red pepper

    1/2cup sliced fresh mushrooms

    1cup (4 ounces) shredded part-skim mozzarella cheese

    1tablespoon finely shredded Parmesan cheese


    Preparation:
    1.Preheat oven to 425F. Lightly spray 12-inch pizza pan with nonstick cooking spray. Unroll pizza dough; press onto prepared pan. Build up edges slightly. Use fork to generously prick dough. Bake 7 to 10 minutes or until lightly browned.

    2.Meanwhile, brown ground beef with onion in large skillet. Drain. Set aside.

    3.Cook and stir pizza sauce, tomato, Italian seasoning, garlic, cumin and red pepper in small saucepan over medium heat; bring to a boil. Reduce heat; simmer, uncovered, about 8 minutes or until of desired consistency.

    4.Spread tomato mixture over evenly pizza crust. Sprinkle with ground beef mixture and mushrooms. Sprinkle with mozzarella and Parmesan cheeses. Return to oven. Bake 5 to 8 minutes or until heated through.
