Egg Bhurji
Ingredients :
6 Eggs
¼ cup Frozen Green Peas (Mattar)
1 medium Onion (chopped)
2 Green Chillies (Hari Mirch) (de-seeded for a milder taste) (chopped)
1 Tomato (chopped)
½ tsp. Garam Masala Powder
½ tsp. Ginger Paste (Pisi Adrak)
1 tsp. Red Chilli Powder (Pisi Lal Mirch) (or to taste)
Salt (to taste)
A bunch of Fresh Coriander/Cilantro Leaves (Hara Dhania) (chopped)
3 tbsp. Vegetable Oil
Method :
Beat eggs in a medium bowl, add salt and red chilli powder, and beat well.
Heat the oil in a non-stick pan. Add the green chillies, ginger paste and onions and saute over medium heat until onions turn golden brown. Then add tomatoes and cook until tomatoes are tender and soft.
Add green peas and cook for another 3 minutes. Then add beaten egg and mix well. Turn the eggs upside down to cook the other side well.
Sprinkle garam masala powder and garnish with chopped coriander/cilantro leaves.
500 Grams Basmati Rice (pre-soaked for atleast ½ hour)
6 Eggs (hard-boiled)
4 large Onions (finely chopped)
1 medium Onion (chopped)
1 (2-inch) piece Ginger (Adrak) (peeled and chopped)
4 cloves of Garlic (Lehsan) (chopped)
8 Green Chillies (Hari Mirch)
1 tsp. Red Chilli Powder (Pisi Lal Mirch) (or to taste)
1 tsp. Garam Masala Powder
1 tsp. Fresh Coriander/Cilantro Leaves (Hara Dhania) (chopped)
2 Bay Leaves (Tezz Pattay)
10 Cardamom Pods (Choti Ilaichi)
½ tsp. Plain Yogurt
½ cup Coconut (Khopra) (grated)
Salt (to taste)
6 tsp. Clarified Butter (Ghee) or Cooking Oil
- Wash and soak rice for atleast ½ hour. Blend the following ingredients in a blender into a smooth paste: garlic, ginger, green chillies, onions and coriander/cilantro leaves. (Add a bit of water if necessary.)
- Shell the boiled eggs and give four long cuts on the white portion of each egg without separating it.
- In a kadai or pot, heat the clarified butter or oil. And fry the onions until they become golden brown and set aside. In the same clarified butter or oil, add the blended paste and fry for a minute or so. Then add red chilli powder, salt and eggs and fry until the eggs get coated with the spices. Remove the eggs and set aside.
- To the same spice paste, add the drained rice, garam masala powder , cardamoms, bay leaves and fry until the rice starts to change color. Add sufficient water and bring to a boil.
- When the air holes appear on the rice surface, reduce the stove heat to low and then add the plain yogurt , coconut and mix well with the rice. Cook until all of the water has absorbed and the rice is tender.
- Cut the eggs into halves and garnish with the fried onions. Cover the biryani with a heavy lid, reduce heat and allow to cook for 30 to 45 more minutes.
Stuffed Egg Pasanda
Ingredients: wheat flour 1 cup
boiled eggs 3

corriander leaves a few
Salt to taste

Directions:
- Preapare the dough from wheat flour the way one prepares for rotis and keep aside
- Grate the boiled eggs
- Mix grated eggs, finely chopped chillies, finely chopped corriander leaves and salt
- Roll the roti from the dough and use the egg mixture to get different shapes
- Spread the egg mixture on top of the roti and then make the roll out of it and close all sides with water
- Deep fry in oil

Baida Kabab (Egg Kabab) RecipeIngredients

2 cloves of garlic
2 green chillies
refined oil for deep frying
1 medium onion
1 large tomato
Salt to taste
1/2 tsp sugar
4 hardboiled eggs
1 egg
1 cup fresh bread crumbs
1/2 cup chopped coriander leaves
1 Grind the ginger, garlic and green chillies together. Finely chop the onion and tomatoes.
2 Heat 1 tbsp oil in a frying pan. Add the onion; stir fry. Add the tomato and the ground paste. Fry till the tomato is cooked and well mixed. Add the salt, sugar and fresh coriander.
3 Grate the hardboiled eggs. Add to the masala and mix well. Spread in a plate evenly and refrigerate for 4 hours.
4 Cut into long strips, like finger chips. Dip in the beaten egg and coat with the breadcrumbs. Deep fry in hot oil till golden.
Serve with a salad or chutney.
Egg drop soup
Ingredients:
1 egg , beaten.
4 cups chicken stock.
Salt , black pepper according to taste.
Ajinomoto .
1 tsp vinegar.
2 tsp soy sauce.
1 spring onion , chopped.
Cornflour mixed in little water for thickening.
Method:
1. bring stock to boil.
2. add salt , black pepper, ajinomoto, vinegar , soysauce.
3. add chopped spring onion.
4. pour the cornflour mixture, stir it so it doesnot become lumpy.
5. pour beaten egg into soup ina a thin stream and stir briskly.
6. its raedy serve with chillies in vinegar, soysauce, chilli sauce.
Chillies in vinegar:
Chop greenchillies and in a small quantity of vinegar , boil it. Allow to cool.
Banana mein bada hi asaan aur peene mein mazedar hai.soup not chillies.
