Mexican Fried Rice
Ingredients :
2 white onions, sliced
3 cloves garlic, crushed
tsp turmeric powder
1 capsicum, sliced
1 tomato, chopped
1 cup mixed boiled vegetables (french beans, carrots, green peas)
1 tsp chilli powder
6 tbsp oil
1 cups uncooked rice
Salt to taste

Method of Preparation :
Wash and soak the rice for 30 minutes, then drain. Saut rice in oil until it turns a light pink shade.
Add 3 cups of water, salt to taste and cook.
Heat the oil in a wide vessel and fry the onions till golden brown.
Add the garlic, fry for a few seconds.
Add the turmeric powder, fry for a few seconds.
Remove the onions and fry the capsicum for a minute in the same oil.
Toss in the chopped tomato, vegetables, chilli powder, salt, and cook for one minute.
Add the fried onions and the cooked rice. Mix well.
